Not all honey tastes the same, here’s a little flavour profile we’ve put together to help select your next honey - keep in mind that honey draws its flavour from the nectar of the flowers bees pollinate, meaning that every single batch we extract will have its own distinct and original taste, texture, and colour.
Light-coloured honey is generally milder in taste while dark-coloured honey is stronger and tends to be higher in antioxidant compounds & mineral content.
Raw honey will crystallise because we do not cook it. This way you get all the good bits that the bees bring back from the flowers – the live enzymes, the vitamins and all the taste. You can make it runny by gently warming the jar in warm water.

red gum
Our most popular honey and what people would expect honey to taste like - a mild sweet flavour, golden in colour, slightly acidic, with a warm after-taste.

jarrah
Dark in colour with a smooth, thick caramel taste. Not as sweet and lower in glucose compared to other honey varieties. Jarrah honey contains a naturally higher level of antibacterial activity resulting in beneficial healing properties for burns, skin repairs, colds, coughs, and mouth ulcers.

honeycomb
Always a hit on a cheese board and amongst our biggest honey lovers, our honeycomb is left exactly as the bees made it to preserve the flavoursome aroma and beauty of natural honey.
Varieties often include Red Gum and Wildflower.

canola
With a fruity burst of sweet flavour that pops on the palate, this honey naturally crystallises into a smooth, creamy texture. Very light to almost white in colour.

wildflower
Western Australia’s wildflower collection is one of the largest on Earth. Over 60% of our 12,000+ species can’t be found anywhere else! So it goes without saying that our wildflower honey will vary from season to season, depending on what is in bloom, and results in an array of colours, flavours, and sweetness.
It is always well received and considered a delightful, classic honey.

banksia
Heavy producers of nectar, Banksia varieties produce a strong rich caramel and molasses aroma and flavour, leaving a dry lingering after-taste.
Very dark in colour.

citrus
With a fragrant citrus and floral essence, this very sweet honey takes on an additional delicate fruity quality with age. Light amber to almost colourless, it will darken and crystallise slowly into granules of various sizes.
Wonderful in herbal teas or paired with cheese.

Unique to our Dwellingup hives, this sweet blend of blackberries, apples, plums, and West Australian natives is well-rounded with earthy undertones, a delicate berry flavour, and a slightly fruity finish.
